Strictly speaking it's an Amontillado - and completely dry - but the fascinating characteristic of this sherry is that it still has a foot back in its fino origins. This is because it has undergone the biological ageing (under a covering of yeast called "Flor") and then subsequently experienced a period of oxidative ageing as that Flor covering fades. It's paler than most other Amontillados and lighter and fresher too. Utterly delicious showing delicate almond and hazelnut character with that classic yeastiness from the Flor. Be sure to serve it chilled.
