Truly up and coming stars of their generation Emmanual and Charles-Henry own and lease 12 hectares of 1er cru vineyards in the Cotes des Blancs, and all around Vertus.
They practice their own lutte raisonnee which is virtually organic in the vineyards and prune very short to restrict yields. To be truly organic this far north is questionable since the climate occasionally requires more use of sulphur and copper in the vineyards.
The average age of their vines is 30 years and the chalk vineyards are planted 90% Chardonnay and 10% Pinot Noir. Only the first pressing (cuvee) is used. All their wines receive a minimim of 3 years' ageing prior to disgorgement and a further 6 months "on the cork".
Being a "Blanc de Blancs" this is pure Chardonnay.
