A regular autumn/winter favourite!  This is 70% Corvina, 20% Rondinella and 10% Molinara.  Young Valpolicella is refermented on the skins left over from making Amarone, which gives it extra richness, concentration and some of those dried-fruit/spice characteristics. It is then aged in oak for roughly a year.  Expect to taste ripe/morello cherry, plum, blackberry, dried fruit, vanilla, brown spice and liquorice, with the characteristic slightly bitter cherry finish of Ripasso.  Perfect with slow cooked meats, mushroom dishes and mature cheeses.
