The Chardonnay grapes are picked in the early morning to preserve freshness and then cool fermented with a specific Chardonnay yeast.  The fermentation is completed in French oak where the wine then spends a further 5 months.  This is a ripe, full and very well-balanced Chardonnay which shows elegance rather than power.  There's a gentle buttery background from the oak which highlights the ripe citrus fruit perfectly.
