Emiliana are the leading winery for organic and biodynamic production in South America and this is their top wine. It's a blend of 53% Syrah, 36% Carmenere, and 11% Cabernet Sauvignon. All grapes are hand-selected and undergo a cold maceration for 5-7 days to extract colour and flavour before the alcoholic fermentation begins in stainless steel using natural yeasts. Once the fermentation is complete the wine remains on the skins for a further maceration of about 10 days. 80% of the wine is then aged in French oak (50% new and 50% used) for 16 months with the remainder matured in concrete eggs. There is only a light filtration before bottling.
With wines like this somehow words seem inadequate to express the true power and concentration of the flavours. It is incredibly complex and rich with deep black fruit flavours and gentle spice. There even seems to be a hint of chocolate and cedar in there as well. What you're paying for here is the attention to detail in the winery, controlled and long extraction of flavour from top quality fruit, and well-managed ageing in just enough oak to produce a fabulously rich and complex red with flavours that last. Please just make sure that the food you drink it with is truly deserving of such an excellent bottle.
