The Emiliana team behind the Coyam Red Blend have taken some prime Chardonnay fruit from Limari Valley and made a Coyam Chardonnay. It is well worthy of the name. Limari Valley is special because it has an unusual combination of cool coastal conditions, intense sunlight, low rainfall, and limestone rich soils, all of which Chardonnay thrives on. This is made from the very best fruit which shows lovely ripeness and concentration and then spends some time in oak to add that round and creamy texture that Chardonnay handles so well. The limestone soil lends a streak of minerality to the finish. Wonderfully complex, rich and long, this would be an exceptional partner with creamy pasta, chicken and light pork dishes. a very classy Chardonnay indeed.
