Chateau l'Ermite d' Auzan Blanc 2025, Costieres de Nimes 13.0%

Made from a uniquely southern blend of Roussanne (60%) Viognier (20%) and Grenache Blanc (20%) without any use of oak. This also bears the estate’s stamp of refinement and is the perfect antidote to Sauvignon fatigue. It is dry, discreetly full and lightly aromatic with a bouquet showing gentle notes of white blossom and a palate which is both crisp and rounded with peachy notes.  Drink with salads, fish, seafood, chicken or any lighter fresh dishes.

Château l'Ermite d'Auzan was founded in the XIth Century by the hermits of Ste Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. The domain's owners for the past 30 years have been Michel and Jérôme Castillon and Jerome has now been joined by his son Tanguy. The work they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible.  They are certified organic but the video above will show you that they go much further using biodynamic practices even to the point of making their own herbal treatments for their vines.
