Only three grape varieties are permitted in Champagne: Chardonnay, Pinot Noir and Pinot Meunier. Most Champagnes are blends of these and Chardonnay is the only white variety. Wines labelled as "Blanc de Blancs" will therefore be 100% Chardonnay. "Blanc de Noirs" indicates a Champagne made from just the black grapes which would usually be 100% Pinot Noir because Pinot Meunier tends only to be used in a supporting role, though there are some producers who focus on the variety. Gremillet Blanc de Noirs Brut nv, Champagne 12.0% - 100% Pinot Noir with biscuity brioche notes and lovely depth.
de L'Auche Brut nv, Champagne 12.0% - 85% Pinot Meunier and 15% Pinot Noir with pear and apricot fruit and a slightly nutty hint.
