This proper, grown-ups’ example is made in Trentino at altitude by a producer who knows what he is doing and cares about why he’s doing it. The first thing that you will notice is that it has flavour, unlike its cut-price, junior variations. Every effort is made to conserve its natural, subtle aromatics and freshness: pressing is gentle, fermentation is cool, the whole process is in stainless steel so there is nothing to cloud the purity of fruit. Delicious with a simply grilled piece of white fish like lemon sole or sea bream, it is also a super aperitif.
