Victor and Vincent Lebreton make outstanding, rich, sweet wines from Chenin Blanc vines. The property has three parcels of land and this is a blend from all three. Intense and crisp as well as sweet, this shows sensational balance. Domaine de Mongilet are certified organic producers. This works well with fruit tarts, lemon meringue pie, baked apples or tarte au citron.
Les Trois Schistes is so named bacause the grapes that go to make it come from three different vinyard plots, all with subtly different soils (and yet all Schist). In the late summer the morning mist from the river infects the grapes with noble rot amking them super sweet. The super-ripe grapes contain so much sugar that, were it to be fermented out to full dryness, there would be an alcoholic content of well above 22%. The winemaking is very much "hands-off" with a long, slow pressing and no addition of enzymes or even yeasts. Nature is simply allowed to take its course. The result is a fantastically complex and concentrated dessert wine which retains a wonderful degree of balancing acidity and freshness. Truly remarkable!
